Leeks are related to garlic and onions and they contain many of the same beneficial compounds found in these well-researched, health-promoting vegetables. Add in vitamin C rich lemon and it's win win in a bowl!



1/2 medium lemon 

1/2 cloves garlic

1 medium leek

1/2 spring onion

1/4 medium fennel

1/2 vegetable stock cube - Low Salt

250 ml Water


  1. Segment the lemon, removing the pips and place in pan.
  2. Wash and slice the leeks, chop the garlic and fennel and put all of these into a pan with the water and the stock cube.
  3. Bring to the boil and simmer for about 15 mins until all the vegetables are soft.
  4. Blend in food processor, season and serve in a bowl with the chopped spring onions on top.
