Feta and spinach pancakes

This is a perfect light lunch that can be adapted will a huge variety of fillings. A great way to use up leftovers too! 



30g wholemeal flour

1 egg

30g frozen spinach defrosted

16g of feta cheese 

Oil for cooking


Mix together 30g wholemeal flour and half an egg to make a batter. Add 30g of frozen spinach (defrosted) with 16g of low-fat feta cheese. Add spoonfuls of the batter to a pan with a small splash of oil. Cook on a moderate heat for 3-4 minutes. Serve with a salad of cherry tomatoes and some low-fat cream cheese. Add some extra greens if you want to really boost nutrient intake.
