An ideal sweet dessert with no added sugar for summer that's rich in vitamin C. Remember to make a batch - you are likely to want to go back for seconds!
Ingredients
1/2 medium banana
1/4 medium mango
1 sprigs fresh mint
60 ml orange juice
1/4 juice of a lime
20 g raisins
Method
- Place raisins in pan with orange juice, cover and simmer for 30 minutes. Leave to cool.
- Blend raisins, juice, mango and bananas together until very smooth.
- Add lime juice.
- Place mixture in a freezer proof container and freeze until firm, stirring once or twice while freezing.
- Allow to stand at room temperature for about 15 minutes before serving with a sprig of mint.
