The high protein recipes is one of my favourite special breakfast dishes for special occasions - but is delicious dessert too! Enjoy!\r\nINGREDIENTS(One pancake)3 egg whites1 tbs coconut flour1-2 tsp Truvia (or other sweetener)Dash of cinnamonDash of baking powder1-2 tbs mascarpone cheeseCoconut oilRaspberry jam:80 g frozen raspberries1\/4 cup\/60 ml. water1-2 tsp truviaMETHOD\r\nHeat up a pan and add the frozen (ideally Scottish!) raspberries, water and truvia. Let it simmer for 5-7 min until you've got a thick consistency. Set aside.Whisk egg whites, coconut flour, truvia, cinnamon and baking powder together. Add some coconut oil to a frying pan and add in the pancake mix. Cook on both sides until golden brown. Add the mascarpone cheese and raspberry jam.
