Pepper & Feta Protein Egg Muffins

Protein is so important for women in midlife, especially at the start of the day to stabilise blood sugars and reduce cravings. 

If you are bored of Greek yogurt, like me, but you want to start your day with plenty of protein, these muffins are perfect! 

They are super quick and easy to make, and can be stored in the fridge or freezer. 

INGREDIENTS

  • 12 eggs

  • 1 red pepper, finely chopped

  • A handful of feta, crumbled

  • Some Fresh herbs (chives & dill work well)

  • Sea Salt and black pepper, to taste

METHOD

  1. Preheat oven to 180°C

  2. Whisk ingredients together and pour into lightly oiled silicone muffin cups (they pop out easily). 

  3. Bake for 18–20 minutes until just set.

This makes 12 muffins, with roughly 7–8g of protein in each. Two or three of these, alongside some salady bits or avocado, makes a perfect breakfast or lunch.
