Broccoli and Tomato Salad with a Creamy Feta Dressing

Broccoli have some powerful cholesterol reducing properties. However, these benefits is only strongest when the broccoli is steamed. Over-boiling the broccoli will reduce, if not completely sabotage these properties. Broccoli also have some powerful antioxidant effects. They contain a trio of glucosinolate phytonutrients which helps in the activation, process and neutralisation and elimination of unwanted substances in the body.

 

Broccoli and Tomato Salad with a Creamy Feta Dressing

Ingredients

  • 40 g Feta - Low Fat
  • 40 ml Natural Yoghurt 
  • 1/4 Broccoli Head Medium
  • 1 Tomato Medium
  • 1/4 Cucumber Medium
  • 1 sprigs Fresh Mint
  • 6  Black Olives
  • 1/2 Juice of a Lemon
  • 1 tbsp olive oil

Method

  1. First cook the broccoli in a pan of boiling water or in a steamer until tender and place in some cold water to cool down.
  2. When cooled and drained mix with the chopped tomato, cucumber and olives (optional)
  3. To make the dressing, place the crumbled feta, yoghurt, lemon juice, olive oil, chopped mint and seasoning into a blender or whisk together in a bowl.
  4. Mix the dressing through the salad and serve straight away - If you are making it for later in the day, then store the salad and dressing separately and mix just before eating
