Broccoli have some powerful cholesterol reducing properties. However, these benefits is only strongest when the broccoli is steamed. Over-boiling the broccoli will reduce, if not completely sabotage these properties. Broccoli also have some powerful antioxidant effects. They contain a trio of glucosinolate phytonutrients which helps in the activation, process and neutralisation and elimination of unwanted substances in the body.
Broccoli and Tomato Salad with a Creamy Feta Dressing
Ingredients
- 40 g Feta - Low Fat
- 40 ml Natural Yoghurt
- 1/4 Broccoli Head Medium
- 1 Tomato Medium
- 1/4 Cucumber Medium
- 1 sprigs Fresh Mint
- 6 Black Olives
- 1/2 Juice of a Lemon
- 1 tbsp olive oil
Method
- First cook the broccoli in a pan of boiling water or in a steamer until tender and place in some cold water to cool down.
- When cooled and drained mix with the chopped tomato, cucumber and olives (optional)
- To make the dressing, place the crumbled feta, yoghurt, lemon juice, olive oil, chopped mint and seasoning into a blender or whisk together in a bowl.
- Mix the dressing through the salad and serve straight away - If you are making it for later in the day, then store the salad and dressing separately and mix just before eating
